I know it's possible with winamp ( i've seen people doing it ) it should be very simple.
I guess it's mentioned in the help file or on the website.

i'm not sure about other mp3 players - but with iTunes you can highlight the tracks and copy/paste it into a spreadsheet - you can then save the spreadsheet as a .txt file. or, if you have any XML knowledge you can manipulate the XML data from any word/text processor into a format such as text.

Maple Free - I understand you completely. I get a buzz from looking at some of the labels - but I also listen to my records all the time, rarely a day will pass where I don't spin some wax.
RasFelipe - I think you can do stuff like that in iTunes. I've made text lists of my ripped CDs like this from iTunes before but I am not sure how to do it anymore.
Collieman - I understand about listening to MP3s to sample unknown works. But once I have heard something I like on MP3 I'll then try really hard to find it on Vinyl!
And how big is too much? I think when there are too many to listen to then you are collecting like they are stamps or coins, rather than to hear them or play them for others to hear.
A friend of mine clears houses for work after people have died etc. He recently got called to a BIG house where more than 50% of the space was given over to storing the late owners vinyl collection - estimated at over 50,000 pieces. Woah.

I don't have any money, I spent it all on records (and Hi-Fi)...
